Ingredients

  • low fat Paneer - 200 gm
  • large Eggplant 1,about - 250 gm
  • Coriander seeds - 1 tbsp
  • Cumin seeds - 2 tsp
  • black pepper Corn - 1 tsp
  • dry Red Chilli - 1
  • whole Wheat Roti or pita bread to serve
  • Olive oil to brush
  • Lime juice to taste
  • salt to taste
  • How to Make Grilled Paneer and Brinjal:

    1. Crush coriander, cumin, pepper and red chilli together. Mix with salt.
    2. Cut paneer into 4 slices.
    3. Cut brinjal into 2 cm thick slices.
    4. Place paneer and brinjal in a bowl.
    5. Toss with crushed spice mixture.
    6. Marinate for one and a half hour.
    7. Brush with olive oil and grill on both sides till light brown.
    8. Serve hot with Roti or pita bread, accompanied by Chutney.
