Ingredients

  • 3/4 cup - gram flour
  • 1.5 cup - Wheat flour
  • 1 - finely chopped small Onion
  • Bottle Gourd - 1 small, grated
  • Carrot - 1 cup grated
  • 6 - crushed Green chillies
  • 2 inch piece - ginger, crushed
  • 4 Cloves - crushed, Garlic
  • 1 tsp - cumin powder
  • 1/4 tsp - Turmeric powder
  • 1 tsp - ajwain
  • 1 pinch - Asafoetida
  • 6 tbsp - oil
  • 1/2 cup - grated Coconut
  • 1/2 cup - chopped fresh coriander
  • Sugar and salt to taste.
  • How to Make Gujarati Muthiyaa:

    1. Mix the flours, chillies, garlic, ginger, salt, sugar, spices (except ajwain, cumin seeds, asafoetida and finely chopped onions and vegetables).
    2. Knead with some water to make a soft dough.
    3. Shape into 1 inch thick rolls and place in a steamer.
    4. Steam for 25 minutes or until cooked. Cool and cut into 1/2 inch thick rounds.
    5. Heat oil and add the asafoetida, cumin and ajwain. Stir for 10-15 secs, then add the onions and vegetables. Stir fry for some time.
    6. Then add the muthiya pieces. Fry well till golden-brown.
    7. Arrange on a serving plate and garnish with coriander and coconut.
