Ingredients

  • 1 - Onion
  • 1 Clove - Garlic
  • Add to this:
  • 2 tsp - ground coriander
  • 1 tsp - ground Turmeric
  • 1/2 tsp - ground Ginger
  • 1/2 tsp - ground chillies
  • 1/2 tsp - ground Cumin seeds
  • 1 cup - thin Coconut Milk
  • 6 - hard boiled Egg
  • 2 tbsp - thick Coconut Milk
  • 1 cup - grated Coconut
  • 1 tbsp - Lemon juice
  • How to Make Hard boiled Egg Curry:

    1. Hard boil the eggs, remove the shell and cut the eggs into halves.
    2. Mix ground coriander, turmeric, ginger, chillies and cumin seeds
    3. Heat a pan with oil and saute chopped onion and a clove garlic for a minute
    4. Add to it the mixed paste and 1 cup of thin coconut milk and simmer until it begins to thicken.
    5. Then add 6 hard boiled eggs, and 2 tbsp of thick coconut milk.
    6. Add salt and lemon juice to taste
