Ingredients

  • Eggplant - 6
  • Onion - 2, chopped
  • Cheese - 4 tsp, grated
  • Minced Meat - 250 g (chicken or pork)
  • Bead crumbs - 3 tsp
  • Salt to taste
  • Water as required
  • Cornstarch - 1 tsp
  • Butter - 1 tsp
  • Oil - 4 tbsp
  • How to Make Hasami Age (Japanese):

    1. Remove the stem of the eggplant. Cut it lengthwise into half. Cut the half, lengthwise, but not all the way through. Soak in salt water.
    2. Heat butter in a pan and saute onion.
    3. Add meat, bread crumbs, salt and water.
    4. In medium heat, cover the pan for one minute.
    5. Put cheese and mix well. Keep aside for cooling.
    6. Divide into six parts.
    7. Wipe off water from the eggplant.
    8. Sprinkle cornstarch on the cut surface.
    9. Place a layer of meat mixture between the eggplant halves. Again, sprinkle cornstarch around the meat.
    10. Heat oil for deep Frying.
    11. On medium heat, fry eggplant until the meat is done.
    12. Garnish with grated ginger and soy sauce/ ketchup and serve.
