Ingredients

  • 4 medium - potato, boiled and peeled
  • 1 tsp - ginger, grated
  • 2 - green chillies, chopped
  • 2 - tomatoes, chopped
  • 2tsp - coriander leaves, chopped
  • Spices:
  • 1/2 tsp - asafetida
  • 1 tsp - Cumin seeds
  • 1 tsp - coriander powder
  • 1/ tsp - Turmeric powder
  • 1/2 tsp - Garam Masala
  • 1/2 tsp - Red Chilli powder
  • Salt to taste
  • 2 tbsp - clarified butter(ghee) + 1/2 tsp
  • Water as required

How to Make Hing Aloo Tarkari

  • Heat clarified butter and add asafoetida, cumin seeds and ginger and stir for a while.
  • Add all spices and salt, maintain low flame.
  • Now add chopped tomatoes and green chillies.
  • Mix and cook till butter separates.
  • Add smashed potatoes and few coriander leaves, toss well and press them gently with spatula.
  • Pour 4 -5 cups of water and cook for 10-15 minutes till water blends with potatoes and butter comes out.
  • Add chopped coriander and 1/2 tsp clarified butter .
  • Serve hot.
