  • For Tangzhong (water roux):
  • 1/3 cup - All-purpose flour
  • 1/2 cup - Water
  • 1/2 cup - Milk
  • For dough:
  • 2.5 cups - All-purpose flour
  • 3 tbsp - Sugar
  • 1 tsp - Salt
  • 2 tbsp - Milk powder
  • 2 tsp - Instant Dry yeast
  • 1/2 cup - Milk
  • 1/8 cup - Cream
  • 1/3 cup - Tangzhong (use half of the tangzhong )
  • 25 g - Butter (cut into small pieces and softened)
  • 1 cup - Chocolate chips
  • How to Make Hokkaido Milk Bread:

    1. Making the water-roux:
    2. Mix the flour in water and milk well, without any lumps.
    3. Cook on medium-low heat, stirring continuously to prevent burning.
    4. This mixture will become thick, you will see some lines for every stir you make with the spoon.
    5. The tangzhong is ready, turn off the heat.
    6. Transfer it to a clean bowl, and cover with a cling wrap.
    7. Let cool completely.
    8. You can use tangzhong once it cools down to room temperature.
    9. Making Dough:
    10. Put the flour, salt, sugar, milk powder and instant yeast in a stand mixer/ food processor and mix it for a few minutes.
    11. Meanwhile in an another bowl, mix the milk, cream and tangzhong until smooth and add to the mixer.
    12. Run on slow speed until the dough comes together.
    13. Now add the butter and knead it until you get a smooth and elastic dough.
    14. Place the dough in a greased bowl and cover it with a towel and keep it aside until the dough doubles in volume, almost an hour.
    15. Place the dough on a clean working surface, divide the dough to make mini loaves or muffins or just a single loaf.
    16. Roll out each portion of the dough with a rolling pin to an oval shape.
    17. Sprinkle generous amounts of chocolate chips.
    18. Take the shorter side of the oval and fold in the middle, take the other end and fold it slightly to overlap the first fold.
    19. Place this folded dough in a pan and cover with a towel, let the dough sit again for an hour.
    20. Preheat the oven to 325F, carefully brush the tops of the loaf with milk and bake them for 20-25 minutes until they are done.
    21. Let it cool in the tins and then, transfer to a rack and cool completely.
    22. Serve the loaves/ rolls with your favourite spreads.
