  • Urad Dal - 1 Cup
  • Sugar - 3 Cups
  • Kesari powder
  • Rose Water
  • Ghee/ Oil - 3 Cups
  • How to Make Homemade Jangri:

    1. Soak the urad daal in water for 10 minutes.
    2. Do not soak it any longer.
    3. Prepare syrup using 1 cup of water to 3 cups of sugar until a one string consistency of the syrup is attained.
    4. Add a bit of rose water and kesari powder and dissolve.
    5. Drain the water from the daal and grind without adding water.
    6. The dough must be tight in consistency.
    7. Add a bit of kesari powder to the dough and mix well until the dough is pale yellow in colour.
    8. Place oil/ghee in a shallow pan and heat well on high flame.
    9. Once it is hot simmer the flame.
    10. Place a ball of the dough in the centre of the rett (refer notes) and fold the four corners to make a bundle of it.
    11. Hold this a little above the ghee and squeeze out the dough in a circular fashion.
    12. Make small overlapping coils in the circumference of the circle by moving anti-clockwise.
    13. Then end by making a circle in the centre above the first circle.
    14. Once the jangri is crisp and golden in colour, remove from oil and drop into the syrup.
    15. Repeat.
