Are you sick and suffering from a cold or sore throat? Or are you just seeking some warmth on a cold winter or rainy evening? Hot and Sour Chicken Soup to the rescue! This wonderfully warm and filling non-vegetarian soup-stew recipe is a great warmer and soothes the throat.

Firstly, the veggies such as cauliflower, French beans, and carrots need to be par boiled, and the stock needs to be kept to boil. Next, bamboo shoots, mushrooms, ajinomoto, pepper, salt and spring onions need to be added to the stock as well and boil it.
You also need to add chilli sauce, soya sauce, vinegar, chicken pieces, cabbage cauliflower, capsicum, beans and carrots and give it a boil as well. Then, add the corn flour mixture for the soup to thicken and gradually pour the egg, while stirring all the time.

Serve with vinegar chillies and chilli sauce and serve! Tip: If you’re looking for a vegetarian recipe, simply skip the chicken.

Ingredients

  • 2 cups - vegetable/ Chicken stock
  • 1 Carrot (cut into fine strips)
  • 6 to 8 French beans (cut into fine strips)
  • 1 Capsicum
  • 4 to 5 small florets Cauliflower
  • 1 small piece Cabbage ( finely chopped)
  • ½ cup - boiled and shredded Chicken
  • a piece Bamboo shoot (cut into strips)
  • few black - Mushrooms (sliced)
  • salt to taste
  • ½ tsp - aji-no-moto
  • ½ tsp - pepper
  • ½ tsp - chilli sauce
  • 1 to 2 Spring onions (finely chopped)
  • 3 to 4 tbsp - Vinegar
  • 2 tsp - soya sauce
  • 1 Egg (beaten)
  • 1.5 tbsp - cornflour (mixed with little water)

How to Make Hot and Sour Chicken Soup

  • Par boil the carrots, French beans and cauliflower.
  • Keep the stock to boil.
  • Add spring onions, salt, pepper, ajinomoto, mushrooms and bamboo shoot. Give 2 to 3 boils.
  • Add the carrots, beans, capsicum, cauliflower, cabbage, chicken pieces, vinegar, soya sauce and chilli sauce. Give it a boil.
  • Add the corn flour mixture.
  • When the soup thickens gradually pour egg stirring all the time.
  • Remove and serve hot with chilli sauce and chillies in vinegar.
