Ingredients

  • 1 medium Fresh White Pumpkin (Ash Gourd)
  • 2 medium Tomatoes
  • 1/4 cup- Moong Dal
  • Salt
  • Fresh Ground Pepper
  • Fresh Coriander / Parsley for Garnish
  • 2 stalks - Celery (Optional), peeled and diced
  • For White sauce:
  • 1 tsp-Butter
  • 1 tbsp- Milk
  • 1 tbsp- Wheat/ Corn Flour

How to Make Hot and sour Pumpkin Soup

  • Slice the pumpkin into medium pieces. Cut tomatoes into quarters so that it is easier to remove the skin once they are cooked.
  • Pressure cook pumpkin, tomatoes and moong dal in about 2 cups of water.
  • Allow to cool. Peel the tomatoes. Blend pumpkin, tomatoes and moong dal in a mixie.
  • For white sauce: heat butter, add flour and stir continuously. Add milk and bring to boil.
  • Stir in the blended mixture into the white sauce and bring to a boil.
  • Garnish with coriander/parsley
  • serve hot with croutons / bread sticks.
