  • 1 medium Fresh white pumpkin (Ash Gourd)
  • 2 medium Tomatoes
  • 1/4 cup- Moong Dal
  • Salt
  • Fresh Ground Pepper
  • Fresh Coriander / Parsley for Garnish
  • 2 stalks - Celery (Optional), peeled and diced
  • For White sauce:
  • 1 tsp-Butter
  • 1 tbsp- Milk
  • 1 tbsp- Wheat/ Corn flour
  • How to Make Hot and sour Pumpkin Soup:

    1. Slice the pumpkin into medium pieces. Cut tomatoes into quarters so that it is easier to remove the skin once they are cooked.
    2. Pressure cook pumpkin, tomatoes and moong dal in about 2 cups of water.
    3. Allow to cool. Peel the tomatoes. Blend pumpkin, tomatoes and moong dal in a mixie.
    4. For white sauce: heat butter, add flour and stir continuously. Add milk and bring to boil.
    5. Stir in the blended mixture into the white sauce and bring to a boil.
    6. Garnish with coriander/parsley
    7. serve hot with croutons / bread sticks.
