Ingredients

  • For the Wada:
  • 6 medium sized Potatoes
  • 6 to 8 Green chillies (crushed)
  • 1.5 Ginger (crushed)
  • 1 tbsp - oil (for vagar)
  • 1 tsp - Mustard Seeds
  • ¼ tsp - Turmeric powder
  • handful finely chopped Coriander leaves
  • Oil for deep frying
  • Salt to taste
  • For the Gram Flour Batter:
  • 2 cups - gram flour
  • 4 tbsp - oil
  • Salt to taste
  • sufficient water to make the batter
  • Others:
  • Pav as required
  • 1 small bowl green chutney

How to Make Hot Wada Pav

  • Boil the potatoes and mash when still hot.
  • Add salt, green chillies, coriander leaves and crushed ginger.
  • Mix well.
  • Heat one tbsp oil in a small kadai.
  • Add mustard seeds.
  • When they splutter add turmeric powder and pour this tempering on the potato mixture.
  • Mix well.
  • Divide the potato mixture into equal portions.
  • Shape each portion into round wadas.
  • In a bowl mix together gram flour, salt and 4 tbsp oil.
  • Add sufficient water and make a little thick batter (thick enough to coat the wadas).
  • Dip each wada in the gram flour batter and deep fry in hot oil till golden.
  • To Serve:
  • Make a slit in the center of the pav.
  • Apply a tsp of green chutney inside it and place a wada in the center of the pav.
  • Serve hot with dry garlic chutney.
