How to Make Hummus with Tahini

  • Soak the chickpeas overnight in plenty of water with 1/2 tbsp of bicarb of soda.
  • Throw away the water the next day.
  • Put the chickpeas in a big pan with plenty of water and boil it.
  • Remove the foam from the surface and boil for 1 to 2 hours until the chickpeas are tender.
  • Drain and put the chickpeas in an electric blender and puree them.
  • You might have to add a little water so that it is not too dry in the blender.
  • Mix the tahini with 1 tbsp of water and the lemon juice.
  • It should become quite smooth and easy to drop from a spoon.
  • Crush the garlic, mix it with the tahini mix and add the salt.
  • Stir the chickpeas mixture.
  • Taste before putting this into the serving dishes.
  • Garnish the middle with a little parsley and pour just a little olive oil to top.
  • Sprinkle a little paprika on top and serve.
