  • 2 breakfast cups - Chickpeas
  • 1/2 to 1/4 tsp - tahini (sesame paste)
  • 2 tsp - of salt
  • 1/2 cup - fresh Lemon juice
  • 1/2 tsp - bicarbonate of soda
  • 1 cup - or more of finely chopped Parsley
  • 8 Cloves Garlic
  • 1 to 2 tbsp - water
  • Paprika
  • Olive oil for sprinkling
  • How to Make Hummus with Tahini:

    1. Soak the chickpeas overnight in plenty of water with 1/2 tbsp of bicarb of soda.
    2. Throw away the water the next day.
    3. Put the chickpeas in a big pan with plenty of water and boil it.
    4. Remove the foam from the surface and boil for 1 to 2 hours until the chickpeas are tender.
    5. Drain and put the chickpeas in an electric blender and puree them.
    6. You might have to add a little water so that it is not too dry in the blender.
    7. Mix the tahini with 1 tbsp of water and the lemon juice.
    8. It should become quite smooth and easy to drop from a spoon.
    9. Crush the garlic, mix it with the tahini mix and add the salt.
    10. Stir the chickpeas mixture.
    11. Taste before putting this into the serving dishes.
    12. Garnish the middle with a little parsley and pour just a little olive oil to top.
    13. Sprinkle a little paprika on top and serve.
