  • 1 - raw mango
  • 1 cup - jaggery
  • 1 tsp - mustard
  • Curry leaves, a small quantity
  • 1 tbsp - sambar powder
  • 1 tbsp - red chilli powder
  • Salt, a pinch
  • Oil for frying

How to Make Iyengar Mangai pachadi

  • Wash and peel the skin from mango and grate finely. Boil it for some 5 minutes till it becomes soft to touch.
  • Grate jaggery and boil it in water and filter all the dust particles. Add it to the mango.
  • Heat oil in a pan/kadai, splutter mustard seeds, curry leaves and add it to the mango-jaggery mix.
  • Add a pinch of salt, not more than that.
  • Now add sambar powder, red chilli powder.
  • Let it boil for some 10 minutes.
  • Mangai pachadi is ready to be served.
