  • 1 - Raw Mango
  • 1 cup - Jaggery
  • 1 tsp - mustard
  • Curry leaves, a small quantity
  • 1 tbsp - sambar powder
  • 1 tbsp - Red Chilli powder
  • Salt, a pinch
  • Oil for frying
  • How to Make Iyengar Mangai pachadi:

    1. Wash and peel the skin from mango and grate finely. Boil it for some 5 minutes till it becomes soft to touch.
    2. Grate jaggery and boil it in water and filter all the dust particles. Add it to the mango.
    3. Heat oil in a pan/kadai, splutter mustard seeds, curry leaves and add it to the mango-jaggery mix.
    4. Add a pinch of salt, not more than that.
    5. Now add sambar powder, red chilli powder.
    6. Let it boil for some 10 minutes.
    7. Mangai pachadi is ready to be served.
