Ingredients

  • 6 burger buns
  • 2 tbsp - Butter
  • Tomato sauce as per taste
  • For patties:
  • 3 Potatoes boiled, peeled, mashed
  • 1/4 cup - mixed veggies, finely chopped
  • (beans, carrot, cabbage, cauliflower, etc.)
  • 4 green chillies, finely chopped
  • 1/2 tsp - ginger, grated
  • 1/2 tsp - garlic, crushed
  • 1 tbsp - Tomato sauce
  • 1/2 tsp - soya sauce
  • 1/2 tsp - Corn flour
  • 1 tbsp - oil
  • Salt to taste
  • Oil to shallow fry
  • For burger sauce:
  • 1 Tomato
  • 1 Capsicum
  • 1 Onion
  • 1 tbsp - Tomato sauce
  • 1/5 tsp - omum seeds (ajwain)
  • 10 flakes Garlic
  • 1/2 piece ginger, sliced
  • 3 Red Chillies
  • 1 tsp - Sugar
  • 1/2 tsp - chilli powder
  • Salt to taste
  • 1 tbsp - white Vinegar
  • Other ingredients:
  • 1/2 cup - cabbage, finely shredded
  • 2 Carrots
  • 2 Tomatoes
  • 1 Cucumber
  • 2 Onions
  • 1 bunch salad leaves
  • 1.5 cups - grated cheese (processed or mozzarella)
  • Big decorative toothpicks and paper napkins (optional)

How to Make Jassy Vegetable Burgers

  • For patties:
  • Heat oil in a heavy saucepan, add ginger, garlic, chillies, stir.
  • Add chopped veggies, stir-fry till tender and bright.
  • Add both sauces, salt, stir-fry for a minute.
  • Add potatoes, cornflour, stir till well blended and a soft dough is formed.
  • Cool to handle easily.
  • Shape into patties, keeping in mind size of burger buns.
  • Shallow fry on a hot griddle or under a grill, or deep-fry if desired.
  • If shallow-frying, then keep them half done, and complete process just before.
  • If deep-frying, roll in fine breadcrumbs beforehand.
  • Also deep-fry just before required.
  • Keep aside.
  • For sauce:
  • Marinate whole chillies in vinegar and 1/5 cup water, for 2-3 hours. Choose very healthy vegetables, pierce a fork at base of capsicum.
  • Hold over open fire, in gas flame, to burn the skin.
  • Wash off burnt skin with tap water.
  • Repeat for onion and tomato.
  • Chop into chunks. Transfer in a mixie with all other ingredients.
  • Run mixie till a smooth sauce is obtained.
  • Keep aside.
  • Other preparations:
  • Slice buns into halves horizontally.
  • Brush soft butter on buns.
  • Grill them in a hot oven for 2-3 mins or till sizzling and light golden.
  • Chop all veggies into thin round slices.
  • Shred half the salad leaves into big pieces.
  • Chop other half very fine.
  • To assemble:
  • Place bun base on a serving plate.
  • Place a salad leaf piece over it.
  • Arrange cucumber, carrot, cabbage, onion over it.
  • Place a sizzling hot pattie from the grill over it.
  • One tomato slice, and chopped salad leave to top it.
  • Sprinkle grated cheese generously.
  • Dot with both burger and tomato sauces.
  • Place top of bun and press lightly.
  • Secure with a toothpick if desired.
  • Grill for 2-3 mins just before serving.
  • Or microwave if desired.
  • Serve hot with French fries or potato wafers and sauce.
