Ingredients

  • 250 g tender fresh Okra
  • 1 tsp Red Chilli powder
  • 1 tsp Dhania (coriander seed powder)
  • 3/4 tsp Mango powder (amchoor)
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Cumin seed powder
  • 2 pinches Asafoetida
  • Salt to taste
  • 1 tbsp oil
  • How to Make Jhatpat Bharwaan Bhindi:

    1. Wash, wipe and remove the tops and tips of okra.
    2. Make a lengthwise incision in each.
    3. Keep aside.
    4. Mix all the dry ingredients together - except asafoetida.
    5. Stuff each of the slit okras with this masala.
    6. Heat oil in a heavy pan.
    7. Add asafoetida.
    8. Add stuffed okra and fry for 8-10 minutes.
    9. Serve hot with parathas or puris.
