Ingredients

  • 2 medium Onions
  • 2.5 to 3 tbsp - besan (gram flour)
  • ½ tsp - Mustard Seeds
  • ½ tsp - Turmeric powder
  • ½ tsp - chilli powder
  • a pinch asafetida
  • 2 tbsp - chopped coriander (optional)
  • 3 tbsp - oil
  • salt to taste
  • How to Make Jhunka (Onion and Gram Flour):

    1. Slice the onions thickly. Heat the oil in a heavy bottomed pan.
    2. When it is smoking, add the mustard seeds.
    3. When they have spluttered, add the asafetida, turmeric and chilli powder in quick succession.
    4. Now put in the onions. Stir-fry for a few minutes.
    5. Lower the heat, cover and cook the onions until soft but not mushy.
    6. Do not let them brown too much. Now add salt.
    7. Uncover, and sprinkle the besan over the onions, a tablespoon at a time, stirring between each addition.
    8. When all the besan has been incorporated, sprinkle a little water over the mixture.
    9. Stir, cover and cook for about 6-7 minutes.
    10. Garnish with coriander if you like and serve hot.
