Ingredients

  • 250 g - Pumpkin (cut into 1 - inch cubes)
  • 3 - whole dry Red Chillies
  • 10 g - Fenugreek seeds
  • 10 g - Cumin seeds
  • 10 g - Turmeric powder
  • 10 g - Red Chilli powder
  • 15 g - Raw Mango powder
  • 15 g - Sugar
  • 50ml - cooking oil
  • Salt to taste (saendha namak)
  • How to Make Kaddu ki subzi:

    1. Heat the oil in a flat pan.
    2. Add cumin and fenugreek seeds and fry until spluttering stops.
    3. Add dry red chillies and saute for half a minute.
    4. Add the powdered spices and cook for 2-3 mins.
    5. Add the pumpkin cubes, sugar and season with salt.
    6. Cook until pumpkin turns soft.
    7. Sprinkle a little water only if required.
    8. Serve hot with aloo pulao.
