Ingredients

  • 3/4 kg. lady's fingers
  • 3 tbsp - Mango powder (amchur)
  • 3 tbsp - Cumin seed powder
  • 1 tsp - chilli powder
  • 1/2 tsp - Turmeric powder
  • 3 tbsp - fresh coconut, grated
  • 1/2 cup coriander leaves, chopped
  • 1 tsp - caramelized Sugar
  • 4 tbsp - oil
  • Salt to taste
  • How to Make Khatti bharwan bhindi:

    1. Wipe the lady's fingers clean.
    2. Remove stems and tips and slit lengthwise.
    3. Mix all powdered spices, sugar, coconut, coriander leaves and salt.
    4. Stuff the lady's fingers with this mixture.
    5. Heat oil in a non-stick pan and arrange the stuffed lady's fingers in it.
    6. Do not cover.
    7. Cook on a low flame, turning occasionally without burning or breaking the vegetable.
    8. Serve with parathas.
