  • 600 gms. seafood (fish, shrimp, mussels, squid)
  • 1200 ml water
  • 10 Shallots
  • 1 tbsp. salt or 3 tbsp. fish sauce
  • 200ml. Tamarind juice
  • 10 hot chillies or dry roasted chillies
  • 8 Lemon leaves
  • 2 stalks Lemon grass cut into 2.5 cm (1 inch) lengths
  • 50 gms. hot Basil leaves
  • 25 gms. Coriander leaves

How to Make Klong Talay (Sour and Spicy Seafood Soup)

  • Bring the water to the boil and add the lemon grass, shallots and seafood.
  • Season to taste with tamarind juice, salt or fish sauce.
  • Add lemon leaves, chilli, hot basil leaves and coriander leaves.
  • Continue to simmer for 30 minutes and serve immediately.
