How to Make Kolkata Doi Potol

  • Mix the padwal pieces with 1/2 tsp of turmeric powder and salt.
  • Heat oil in a pan and deep-fry the padwals until brown. Drain and keep aside.
  • In the same oil, add the cumin seeds and grated ginger. Saute for a minute.
  • Add the spices, sugar, salt and the beaten yoghurt. Mix well. Simmer until the oil leaves the sides of the pan.
  • Add the fried padwals to the mixture and 1/2 cup of water.
  • Simmer till the gravy thickens. Serve hot with luchi (puri) or paratha.
