Ingredients

  • 4 - boneless Chicken breasts
  • 1/4 cup - chopped Onions
  • 1 stalk - chopped Cilantro leaves
  • 1 can - Chicken broth
  • 2 can - water
  • 2 tbsp - Lemon juice
  • 1.5 cups - instant Rice
  • 1 tsp - Turmeric powder
  • 1 tbsp - Mint leaves chopped
  • 6 - Green chillies chopped
  • 2 - Bay Leaves
  • 1/2 cup - thick Curd
  • 1/2 tsp - Garlic and Ginger paste
  • pepper to taste
  • salt to taste
  • How to Make Lemon Chicken and Rice:

    1. Place rice in oven proof dish that will hold the chicken in single layer.
    2. Sprinkle onion and cilantro over rice. Place chicken over this.
    3. Pour broth, lemon juice and water over it, then salt and pepper.
    4. Add all the remaining ingredients to the dish.
    5. Cover with lid or foil and bake at 350 degrees F until chicken is done and liquid is gone.
    6. Should be about 30 to 40 minutes.
    7. Serve hot with onion and tomato raitha.
