Ingredients

  • 300 g - Chicken breasts, skinless and boneless-sliced
  • 1/2 - small Chicken stock cube, crumbled
  • 1 Clove - garlic, crushed
  • 1 red Capsicum
  • 1 yellow Capsicum
  • 3/4 th tbsp - chopped fresh Lemon grass
  • 1 onion, sliced
  • 2 tbsp - walnuts, halved
  • 2 tbsp - Lemon juice
  • 1 tsp - grinded Lemon rind
  • 2 tbsp - soya sauce
  • a sprig - Rosemary
  • salt to taste

How to Make Lemon Chicken Stir-fry with Walnuts

  • In a non-stick wok, cook the chicken until brown, all over.
  • Remove and keep warm in bowl.
  • Add onions, capsicums and lemon grass, cook until vegetables are crisp tender.
  • Add the walnuts, stir-fry for a minute or two.
  • Add the chicken, rind, juice, sauce, stock cube and garlic.
  • Stir fry until it is cooked.
