How to Make Lemon Grass Chicken Skewers with Honey Dressing

  • For the honey dressing, combine the honey, lemon juice and vinegar.
  • Season to taste and set aside.
  • Place the chicken in a bowl with the oil and chilli, and toss to coat.
  • Halve the lemon grass diagonally to form a point and thread the chicken onto it.
  • Cook on a pre-heated hot barbecue or grill pan for two to three minutes or until cooked through.
  • To serve, top the lettuce leaves with skewers and spoon over the dressing.
