Ingredients

  • 500 g - lilva (hyacinth beans)
  • 250 g - Maida (refined flour)
  • 10 g - cumin
  • 10 g - Coriander seeds
  • 30 g - Green chillies
  • 5 g - chilli powder
  • 25 g - Garam Masala
  • 25 g - Coriander leaves 3 tbsp - Lime juice
  • salt to taste
  • ground nut oil, for frying
  • How to Make Lilvani Kachori:

    1. De-pod beans.
    2. Hand-crush roughly.
    3. Sieve refined flour with half a tsp salt.
    4. Add 1 tbsp oil.
    5. Knead stiff dough with water.
    6. Set aside to ferment for 30 minutes.
    7. Mix all herbs and spices in the beans.
    8. Toss well.
    9. Heat frying oil.
    10. Roll out small roundels from flour dough.
    11. Take a spoonful of bean mixture
