  • 1 cup - Small lima beans, soaked for a few hours, then drained
  • 1 bunch - Swiss chard, washed and chopped into shreds
  • 6 Cloves - Garlic, thinly sliced
  • 2 - Medium tomatoes, diced
  • Salt to taste
  • 1 tsp - Canola or other vegetable oil
  • 1 tsp - Cayenne pepper or Red Chilli powder
  • 1/2 tsp - Turmeric (optional)
  • How to Make Lima Bean Stew with Swiss Chard:

    1. Put all the ingredients into a pressure cooker or a large pot, add four cups of water and cook until the lima beans are tender.
    2. In a small skillet, heat 1 tsp of oil, add the cayenne pepper/ red chilli powder, turmeric (optional).
    3. Stir for about 10 seconds, then add to the rest of the stew.
    4. Bring the stew to a boil, adding some water if it's too thick.
    5. Check for salt, turn off the heat and serve hot with boiled rice or crusty bread.
