Ingredients

  • 10 - fresh juicy lychees deseeded
  • 2 slices - Pineapple cubed
  • 1 - orange, segmented, peeled
  • 1 - Apple diced, deseeded
  • 1 - avocado, peeled, diced
  • 1 - yellow Capsicum
  • 1 sprig - Spring onions greens, finely chopped
  • 2 - 3 - salad leaves, shredded roughly
  • For dressing:
  • 1 tsp - Mint leaves finely chopped
  • 1 tsp - Basil leaves finely chopped
  • 1 tbsp - Coriander leaves finely chopped
  • 1 tsp - black sesame seeds
  • 1 pinch - Asafoetida
  • 1 - small flake Garlic crushed
  • 1 tsp - Olive oil
  • 1 tsp - prepared mustard paste
  • 1 tsp - white Vinegar
  • 1 tsp - Lemon juice
  • 1 tsp - soft Brown sugar
  • 1/2 tsp - chilli flakes
  • salt
  • 1 tbsp - water
  • How to Make Lychee Salad:

    1. Insert fork in base of yellow capsicum.
    2. Hold over flame, till skin gets well charred.
    3. Remove, hold under running water, rub till skin is removed.
    4. Press out excess water, slice into thin slivers.
    5. Keep aside till required.
    6. Mix all ingredients for dressing, till flavours are well blended.
    7. Mix all prepared fruit in a large salad bowl.
    8. Pour prepared dressing over salad.
    9. Toss well with fork till well mixed into fruit and veggies.
    10. Chill well before serving.
