Ingredients

  • 170 g - flour
  • 120 g - sugar
  • 120 g - butter or margarine
  • 1/2 tsp - baking soda
  • 3 - eggs
  • 1 tsp - lime juice
  • 1 tsp - lemon rind
  • 1/2 tsp - lemon essence
  • few drops - vanilla essence
  • 15 g - candied orange peel
  • Milk to mix
  • 1 pinch - salt

How to Make Madeira Cake

  • Sieve the flour with the baking powder.
  • Cream the butter and sugar till light and fluffy.
  • In a steel vessel beat the eggs with vanilla essence.
  • Add to the sugar and butter mixture little by little while mixing gently.
  • Take care that the mixture does not curdle.
  • Fold in the flour lightly.
  • Add lemon juice, lemon rind and lemon essence.
  • Add enough milk to the mixture till dropping consistency.
  • Pour the mixture in a greased baking tin.
  • Bake in an oven at 375 degrees Fahrenheit/150 degrees centigrade for about 45 minutes.
  • Decorate with strips of candied orange peel.
