How to Make Madras pepper chicken

  • Finely grind onion, garlic and ginger.
  • Finely grind black pepper seeds, cumin and sweet cumin.
  • Finely grind almonds and cashew nuts.
  • Wash chicken and cut into pieces.
  • Marinate with ground onion mixture, yoghurt and turmeric for 15 minutes.
  • Place in pot and cook for 10 minutes.
  • Heat oil in a pan over medium heat and fry the ground almond mixture and clove powder for a few seconds.
  • Add cooked chicken pieces.
  • Stir well, then add ground pepper mixture.
  • Stir fry till chicken is light brown.
  • Add tomato sauce and salt to taste.
  • Serve hot with rice.
