Ingredients

  • For the curd:
  • 500 ml - slightly sour curd, whisked
  • 3 tsp - gram flour
  • 1/2 tsp - Sugar
  • 1.25 tsp - salt to taste
  • For spice powder:
  • 1 tsp - oil
  • 1 tsp - Fenugreek seeds
  • 4 dried - Red Chillies
  • Other ingredients:
  • 300 g - ash gourd, cut into 1/2 inch cubes
  • 2 - green chillies, slit lengthwise
  • 1/2 tsp - Turmeric powder
  • 1/2 inch piece - ginger, grated
  • For seasoning:
  • 2 tsp - oil
  • 1 tsp - Mustard Seeds
  • 1/2 tsp - Hing
  • 6 strands - Curry leaves
  • How to Make Majjiga Pulusu:

    1. For spice powder:
    2. Heat oil and fry the ingredients under this for a few moments and grind to a fine powder.
    3. Other ingredients:
    4. In a pan boil water and add turmeric, green chillies and ginger and bring it to boil.
    5. To this add ash gourd, cover and simmer for 5 -7 minutes till tender.
    6. Lower heat, pour in blended curd mixture and simmer uncovered for 3 - 4 minutes, stirring continuously.
    7. Sprinkle in ground spice powder, mix well and simmer for a minute.
    8. For seasoning:
    9. Heat oil and add remaining ingredients for seasoning.
    10. When mustard seeds splutters, pour seasoning over ash gourd curd mix.
    11. Serve hot.
