Malabar avial is a popular vegetarian side dish from Kerala. Assorted vegetables with coconut and minimal spices make this recipe a definite during Onam.

Ingredients

  • Vegetables
  • 1 cup - snakegourd
  • 1/2 cup - Ridge gourd
  • 1/4 cup - Bitter gourd
  • 1/2 cup - Cucumber
  • 4 Carrots
  • 3 Drumsticks
  • 1/2 cup - long beans
  • 1/4 cup - Raw Mango
  • For grinding:
  • 1 - Coconut
  • 1/2 tsp - cumin
  • 1 Clove Garlic
  • 3 Green chillies
  • 1 string Curry leaves
  • 1/2 cup - Curd
  • 1 tsp - Turmeric powder
  • Salt as required
  • 1/2 tsp - oil
  • How to Make Malabar Avial:

    1. Cut all the vegetables and keep aside.
    2. Place them in a pressure cooker along with salt, turmeric powder, water and cook up to 3 whistles.
    3. In the meantime, grind the ingredients coconut,cumin, garlic, green chillies to a coarse paste.
    4. Mix this paste with cooked vegetables and allow to boil.
    5. Once it starts boiling, add curry leaves & curd.
    6. Switch off the flame and add 1/2 tsp oil on top of the curry.
    7. Malabar style avial is ready.
