Ingredients

  • 1 kg - Chicken breasts, skinned, boned and cubed
  • 2 cups - Mango puree
  • 1 1/2 cups - Cream
  • 2 medium onions, finely chopped
  • 10 - dried figs, chopped
  • 2 Cloves - garlic, crushed
  • 3/4th tbsp - grated fresh Ginger
  • 2 1/2 tbsp - Ghee
  • 3/4 tsp - coriander powder
  • 3/4 tsp - cumin powder
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - Ginger powder
  • 1/4 tsp - Cinnamon powder
  • 2 1/4 tbsp - Lime juice

How to Make Mango & Fig Chicken

  • In a bowl, rub the garlic and ginger into the chicken and leave to marinate for 2-3 hours.
  • Barbecue or pan fry chicken until tender. Cut into 1/2 pieces.
  • Heat ghee in a large non-stick wok. Saute the onions, until light brown in colour.
  • Add all the spices, saute for a minute until it releases its aroma.
  • Add the chicken, figs, mango puree, cream and lime juice.
  • Stir and cook for 8-10 mins. until mixture thickens slightly.
  • Serve hot with steamed or sauteed vegetable or rice.
