Ingredients

  • Mango Sauce:
  • 1 ripe mango, peeled and sliced
  • 1/2 cup Sugar
  • 1 tbsp Lemon juice
  • 2 tbsp Butter
  • For Cake:
  • 24 g plain flour
  • 6-8 tbsp Pineapple juice
  • 200 g powdered Sugar
  • 4 eggs, separated
  • 200 g Butter
  • 1 tsp baking powder
  • 1 tsp Mango essence
  • How to Make Mango Cake:

    1. For Mango Sauce: Melt sugar till brown.
    2. Add butter and lemon juice.
    3. Stir till a syrup forms.
    4. Place mango slices. Let it cook for 3-4 minutes.
    5. Method for Cake:
    6. Cream the sugar and butter till light and fluffy.
    7. Add egg yolks one at a time and beat well.
    8. Beat the egg whites till stiff.
    9. Sift the flour with the baking powder. Then carefully fold it into the cream mixture, alternating with the egg whites.
    10. Add mango essence and mix well.
    11. In a baking dish, place the mango slices (removed from sauce).
    12. Then pour the sauce over it.
    13. Pour the cake batter.
    14. Bake at 170 degree C for 30-40 mins.
    15. Insert a knife into the centre.
    16. If it comes out clean, the cake is done.
    17. Allow it to cool and then turn it upside down.
