Ingredients

  • 2 - Cloves of garlic, crushed
  • 3/4 tsp - grated fresh Ginger
  • 1 kg - Chicken breasts, skinned, boneless and cubed
  • 2.5 tsp - Ghee
  • 2 - medium onions, finely chopped
  • 3/4 tsp - coriander powder
  • 3/4 tsp - cumin powder
  • 1/2 tsp - Turmeric powder
  • 1/4 tsp - Ginger powder
  • 10 - dried figs, chopped
  • 2 cups - Mango puree
  • 1.5 cups - Cream
  • 2.25 tbsp - Lemon juice

How to Make

  • In a bowl, rub the garlic and ginger into the chicken and leave to marinate for 2-3 hours.
  • Barbeque or pan-fry chicken until tender.
  • Cut into 1.5 inch pieces.
  • Heat ghee in a large non-stick wok.
  • Saute the onions, until light brown in colour.
  • Add all the spices, saute for a minute until it releases its aroma.
  • Add the chicken, figs, mango puree, cream and lime juice.
  • Stir and cook for 8-10 minutes until mixture thickens slightly.
  • Serve hot with steamed or sauteed vegetables or rice.
