Ingredients

  • 2 - Cloves of garlic, crushed
  • 3/4 tsp - grated fresh Ginger
  • 1 kg - Chicken breasts, skinned, boneless and cubed
  • 2.5 tsp - Ghee
  • 2 - medium onions, finely chopped
  • 3/4 tsp - coriander powder
  • 3/4 tsp - cumin powder
  • 1/2 tsp - Turmeric powder
  • 1/4 tsp - Ginger powder
  • 10 - dried figs, chopped
  • 2 cups - Mango puree
  • 1.5 cups - Cream
  • 2.25 tbsp - Lemon juice
  • How to Make Mango fig chicken:

    1. In a bowl, rub the garlic and ginger into the chicken and leave to marinate for 2-3 hours.
    2. Barbeque or pan-fry chicken until tender.
    3. Cut into 1.5 inch pieces.
    4. Heat ghee in a large non-stick wok.
    5. Saute the onions, until light brown in colour.
    6. Add all the spices, saute for a minute until it releases its aroma.
    7. Add the chicken, figs, mango puree, cream and lime juice.
    8. Stir and cook for 8-10 minutes until mixture thickens slightly.
    9. Serve hot with steamed or sauteed vegetables or rice.
