Ingredients

  • 2 cups idli batter
  • 1 tsp - oil
  • 1 - steel plate
  • For the Seasoning:
  • 1 tbsp - oil
  • 1 tsp - Mustard Seeds
  • 1/2 tsp - Cumin seeds
  • 1/4 tsp - black gram
  • 1 tsp - Chickpea
  • 10 - 12 - cashew nuts, split
  • 1/2 - inch piece ginger, chopped
  • 1 - green chilli, chopped
  • 6 spring - curry leaves, chopped

How to Make Masala Sandan

  • In a pan, add mustard seeds and when they begin to crackle, add cumin seeds, black gram, chickpea, cashew nuts, chopped green chilli, ginger and curry leaves and fry for a minute or two.
  • Pour this seasoning over idli batter and mix it well until seasoning gets well combined with idli batter (remove fried cashew nuts from seasoning and arrange for final stage of steaming).
  • In a steel bowl, grease 1 tsp oil.
  • Pour seasoned idli batter, decorate with fried cashew nuts on top of the batter up to 3/4 level and steam on a medium heat for 20 - 25 minutes.
  • When cools, cut into desired shape.
