Ingredients

  • 6 - Egg whites
  • 2 cups - Castor Sugar
  • 1 cup - Chocolate pieces
  • 1 tsp - Cream of tartar
  • 1 tsp - Vanilla 
  • 2 cups - Cream
  • Half basic recipe of vanilla icecream
  • How to Make Meringue Glace:

    1. Beat egg white with cream of tartar an a pinch of salt until stiff, add sugar gradually beating well until stiff peaks are formed, add vanilla.
    2. Make 2 x 9" round on a lightly greased baking pan, and bake in a very slow oven until dry.
    3. Mix chocolate pieces with vanilla ice cream.
    4. Put one round of meringue on a platter and spoon ice cream over it, put the other round of meringue over it, press a little.
    5. Whip cream with 2 tsp. castor sugar and 1/2 tsp. vanilla, and frost the side of the meringue with it; pipe some stars in a ring on a edge of the meringue.  Freeze until serving time.
    6. Just before serving, pour 1/2 cup chocolate sauce in the centre.
    7. Sprinkle some grated chocolate over the cream border.
