  • 2 tsp - Aniseeds
  • 2 tsp - red chilli powder
  • 1 tsp - black pepper
  • 1/2 tsp - salt
  • 2&1/4 tsp - coriander seeds
  • 2 tbsp - dried oregano
  • 2 tbsp - dried thyme
  • 4 skinless, boneless chicken breasts, cut into 2 halves
  • 5-6 lettuce leaves

How to Make Mexican Grilled Chicken Breasts

  • Pound all the dry spices and set aside.
  • Wash chicken and pat dry. Gently rub some of the spice mixture into both sides of the chicken.
  • Note: Store the leftover spice mixture for future use.
  • Grill the chicken on an electric grill or directly over medium-lit coals, until the chicken is tender.
  • Line a serving tray with lettuce leaves.
  • Place the chicken pieces over it.
  • Serve with salsa.
