Ingredients

  • 2 cups thotakura (amaranth leaves), chopped fine, including tender stems
  • Salt
  • 8 crushed garlic cloves (husk removed)
  • 1/4 tsp - green chillies, chopped fine
  • 1/4 tsp - red chillies (broken into pieces)
  • 1/4 tsp - mustard seeds
  • 1/4 tsp - cumin/jeera
  • 2 tbsp - fried ground nut powder
  • 2-3 tsp - oil
  • 1 tbsp - chopped onion
  • turmeric powder/haldi, a pinch
  • 8 curry leaves

How to Make Microwave thotakoora thalimpu

  • Put oil in a microwave safe bowl, add mustard, jeera, red chilli, garlic, haldi and curry leaves.
  • Micro high for 2 mins.
  • Add chopped chilli and onion, mix well and micro high for 2 mins.
  • Add chopped greens, mix well on high for 6 mins.
  • Stir once every 2 mins (with lid for first 4 min).
  • Remove and sprinkle groundnut powder, mix well and allow standing time.
  • Serve with chapatti/poori/plain rice.
