Ingredients

  • 1/2 cup - red Pumpkin (cut into 1 inch pieces)
  • 2 cups - thick Yoghurt
  • 1 - onion, cut into small pieces
  • 1/2 tsp - chilli powder
  • 2 tbsp - fresh coriander for garnishing
  • 1 tbsp - oil
  • 1/2 tsp - Mustard Seeds
  • 1/2 tsp - split Urad Dal
  • 2-3 Red Chilli (dried)
  • a few Curry leaves
  • a pinch of Asafoetida
  • salt
  • How to Make Microwaved red pumpkin:

    1. Keep the red pumpkin covered in a microwave bowl and microwave for 3-4 mins.
    2. Mash the cooked red pumpkin well. Allow it to cool.
    3. After it cools down, add yogurt, salt, chilli powder, cut onions and mix it well.
    4. Heat oil in a pan and add hing, mustard seeds, curry leaves and urad dal. When it turns slightly brown, add the yogurt-pumpkin mixture to it.
    5. Garnish with coriander and serve.
