Ingredients

  • 2 cups - cooked basmati Rice
  • 1 - Onion (chopped)
  • 3 - Green chillies (slit)
  • 1/2 tsp - Cumin seeds
  • 15 - cashew pieces
  • 1/4 cup - Green peas (frozen)
  • 1 tsp - Ghee
  • oil as needed
  • salt to taste
  • To grind: 1 cup - Mint leaves
  • 1/4 cup - Coriander leaves
  • 1 tsp - Fennel seeds
  • 10 - peppercorns
  • 1/2 tsp - Cumin seeds
  • 1 - Cinnamon stick
  • 3 - Cloves
  • 2 tbsp - grated Coconut
  • How to Make Minty Cashew N Peas Pulao:

    1. Mix the ingredients listed for grinding. Add enough water, grind to a fine paste and keep aside.
    2. Heat oil in a large sauce pan and add the cumin seeds.
    3. When the seeds crackle, add the cashew pieces and fry till golden brown.
    4. Add the chopped onion and green chillies and saute until the onions are translucent.
    5. Add the green peas, salt and grounded paste and cook on simmer until the oil separates.
    6. Add the cooked rice and toss gently until everything is mixed well.
    7. Drizzle some ghee.
    8. Serve hot with any side dish.
