Ingredients

  • 1 cup - rice flour
  • 1/2 cup - gram flour
  • 1/2 cup - oats flour or rolled oats (powdered)
  • 1 cup - roasted gram/pottukadalai flour
  • 1/4 cup - channa dal (soaked)
  • 1 tsp - butter
  • 1/2 tsp - hing powder
  • 2 - dry red chillies
  • 1/2 tsp - fennel seeds
  • 1 tsp - peppercorns
  • 2 - garlic cloves
  • a handful of mint leaves
  • 1 tsp - cumin seeds
  • salt to taste
  • oil for deep-frying

How to Make Minty Oats Thattai

  • Grind the dry red chillies, fennel seeds, peppercorns, garlic cloves, cumin seeds and mint leaves into a slightly coarse powder.
  • Mix the powder with rice flour, oats flour, gram flour, roasted gram flour, butter, hing, salt, soaked channa dal in a large vessel.
  • Knead a soft and stiff dough with enough water.
  • Heat oil for deep-frying.
  • Take a golf ball-sized dough. Line two greased baking sheets or zip lock bags in a poori press and arrange the dough in between.
  • Give a gentle press to flatten the dough.
  • Drop the flattened thattai in the oil and fry till golden brown.
  • Repeat the process and make more thattais.
  • Store in an airtight box.
