Ingredients

  • 3 potatoes
  • 3 onions
  • 3 capsicums
  • 2 tbsp - grated fresh coconut
  • 1 tsp - red chilli powder
  • ¾ tsp - mustard seeds
  • 1 tsp - cumin seed powder
  • 1 tsp - coriander powder
  • 3 tbsp - oil
  • ½ tsp - sugar
  • ¼ tsp - turmeric
  • salt to taste

How to Make Mixed Bhaji

  • Cut the onions, potatoes and green peppers into thin, lengthwise strips.
  • Heat the oil in a wok. When hot, pop in the mustard seeds and turmeric.
  • Add the onion and saute till golden brown.
  • Then add the potato and green pepper and stir fry (10-15 minutes) till cooked. Stir constantly.
  • Complete the dish by stirring in the coriander, cumin seed and red chilli powder, grated coconut, sugar and salt.
  • Serve hot.
