Ingredients

  • 2 cups - Potatoes (cooked and cubed)
  • 2 - Onions (finely chopped)
  • 1/2 cup - Spinach (chopped)
  • 1/4 cup - Drumstick leaves (frozen)
  • 1/4 cup - Methi leaves (frozen)
  • 1 tsp - Red Chilli powder
  • 3 - Garlic Cloves (crushed)
  • 1 tsp - Fennel seeds
  • salt to taste
  • oil as needed
  • How to Make Mixed Greens Potato Roast:

    1. Heat oil and fry the fennel seeds.
    2. Add the chopped onions, salt and crushed garlic cloves. Saute for a few minutes until the onions are translucent.
    3. Add the potatoes and red chilli powder and cook for a few seconds.
    4. Add the spinach, drumstick leaves and methi leaves to the potatoes.
    5. Cook on simmering flame for a few minutes until the oil separates.
    6. Serve hot with rice or roti.
