Ingredients

  • 2 - medium-sized radish, cut into 1 inch cubes
  • 250 g - pumpkin, cut into 1 inch cubes
  • 7 to 8 - small brinjals, cut into 1 inch cubes
  • 2 cups - chopped Spinach
  • 10 to 12 - small Prawns
  • 2 - green chillies, slit lengthwise
  • 1 - medium-sized onion, finely chopped
  • 1 tbsp - panch phoron
  • 1 tsp - Turmeric powder
  • 1 tbsp - coriander powder
  • Salt, as required
  • Oil, as required
  • How to Make Mixed Veg with Prawns:

    1. Marinate the prawns with a pinch of salt and turmeric for some time and pan fry it.
    2. In a skillet, splutter panch phoron, chopped onions, green chillies and turmeric.
    3. Add prawns and fry with the spices.
    4. Add radish and cook for a minute.
    5. Add pumpkin and brinjal consecutively and cook until half-done.
    6. Lastly, add salt , coriander powder and spinach leaves and mix well.
    7. Serve hot with rice and dal.
