Ingredients

  • 1 cup - Cauliflower florets
  • 1 cup - French beans, finely chopped
  • 1 cup - chopped Carrot
  • 1/2 cup - green peas, shelled
  • 3 - green chillies, chopped
  • 2 - onions, chopped
  • 1 tbsp - chopped Garlic
  • 1/4 tsp - Mustard Seeds
  • 8 - Curry leaves
  • 1/2 cup - grated Coconut (optional)
  • 1 tbsp - oil
  • Salt to taste
  • How to Make Mixed Vegetable Foogath:

    1. Parboil the cauliflower, beans, carrots and peas in a little water for about 5 or 6 minutes.
    2. Drain and keep aside.
    3. Heat oil in a pan and add the mustard, garlic and curry leaves.
    4. When the mustard starts spluttering add the chopped onion and green chillies and fry till the onions turn slightly brown.
    5. Add the parboiled vegetables and salt and mix well.
    6. Mix in the grated coconut.
    7. Cover and cook for about 2 more minutes then turn off the heat.
