  • 2 cups - basmati rice (cooked)
  • 2 cups - mixed vegetables (carrots, bell peppers, baby corn, beans, green peas)
  • 1/2 cup - paneer (cubed)
  • 1 - onion (sliced lengthwise)
  • 3 - tomatoes (chopped roughly)
  • 1 tsp - cumin seeds
  • 1/2 tsp - garam masala powder
  • 1 tsp - red chilli powder
  • 1/2 tsp - cumin seed powder
  • 1/4 tsp - pepper powder
  • 2 tbsp - coriander leaves
  • salt to taste
  • oil as needed

How to Make Mixed Vegetable N Paneer Tomato Rice

  • Heat enough oil in a pan. Add the cumin seeds and let them splutter.
  • Add the onion slices and saute until translucent.
  • Add the mixed vegetables and stir with red chilli powder, cumin seed powder, pepper powder, garam masala powder, coriander leaves and salt.
  • Grind the chopped tomatoes as puree.
  • Heat a few drops of oil in a small pan and shallow-fry the paneer cubes until they turn golden brown. Keep aside.
  • Once the vegetables are half-cooked, add the tomato puree and cook everything on medium high flame until the oil separates.
  • Add the cooked rice and paneer cubes and toss gently to mix everything well. Serve hot.
