Ingredients

  • 2 cups - flaked rice
  • 1 - potato, grated
  • 1 - carrot, grated
  • 1 - radish, grated
  • 1 tbsp - cooked Bengal gram
  • 1 - chopped green chilli
  • 1 tbsp - chopped spinach
  • a pinch - a asafoetida
  • 1/4tsp - mustard seeds
  • Salt to taste
  • 1 sprig - curry leaves
  • 1 tbsp - coriander leaves
  • 1 tbsp - lemon juice
  • 1 tbsp - oil

How to Make Mixed Vegetable Poha

  • Put flaked rice in a strainer.
  • Keep it under running water for a minute to soak it. Drain well.
  • Peel and grate carrot, potato and radish.
  • Season hot oil in a pan with asafoetida, mustard seeds and curry leaves.
  • Add grated carrot, potato and radish.
  • Add cooked Bengal gram and chopped green chilli.
  • Add the flaked rice and salt to taste. Mix well.
  • Sprinkle lemon juice and serve garnished with coriander leaves.
