How to Make Mixed Vegetables Chilli Kothu Parotta

  • Cook the parottas. Cut as small pieces or grind into small pieces in a mixie and keep aside.
  • Heat the onions, tomato, curry leaves and fennel seed powder and saute well. Add ginger-garlic paste and saute until the raw smell disappears.
  • Add the carrot, potato, green peas, green chillies and saute well. Add the green and red capsicum and saute for a while.
  • Add the garam masala powder, chilli powder, turmeric powder, pepper powder, salt and the parotta pieces. Cook on simmering heat for about 10 minutes until the parottas are well mixed.
  • Add the coriander leaves and put off the flame.
