Ingredients

  • 4 - plain parottas
  • 2 - Onions (chopped)
  • 1 - Tomato (chopped)
  • 1 - Carrot (chopped)
  • 1/2 cup - Green peas
  • 1/2 cup - green and red Capsicum (chopped)
  • 1 - Potato (chopped)
  • 2 - Green chillies (slit)
  • 1/2 tsp - Fennel seed powder
  • 1/2 tsp - pepper powder
  • 1/2 tsp - ginger-garlic paste
  • 1/2 tsp - Garam Masala powder
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - Red Chilli powder
  • 3 - Curry leaves
  • 2 tbsp - Coriander leaves (chopped)
  • oil as needed
  • salt to taste
  • How to Make Mixed Vegetables Chilli Kothu Parotta:

    1. Cook the parottas. Cut as small pieces or grind into small pieces in a mixie and keep aside.
    2. Heat the onions, tomato, curry leaves and fennel seed powder and saute well. Add ginger-garlic paste and saute until the raw smell disappears.
    3. Add the carrot, potato, green peas, green chillies and saute well. Add the green and red capsicum and saute for a while.
    4. Add the garam masala powder, chilli powder, turmeric powder, pepper powder, salt and the parotta pieces. Cook on simmering heat for about 10 minutes until the parottas are well mixed.
    5. Add the coriander leaves and put off the flame.
