  • 2 cups - All-purpose flour
  • 3/4 cup - Sugar
  • 1 cup - Dark chocolate (chopped)
  • 1 tbsp - Instant Coffee powder
  • 3 tbsp - Pistachios (chopped)
  • 1 tsp - Baking powder
  • 1/4 tsp - Baking soda
  • 2 - Eggs
  • 1/2 cup - Oil
  • 1/2 cup - Yogurt

How to Make Mocha Pistachio Muffins

  • Beat the eggs and sugar together until this mixture turns pale and smooth.
  • Add the coffee powder and beat again.
  • Meanwhile, sieve together the flour with baking soda, baking powder and keep aside.
  • Now melt the chopped chocolate with 1/3 cup water in a microwave oven and make a smooth chocolate sauce.
  • Add this chocolate sauce, oil and yogurt to the egg-sugar mixture.
  • Beat everything for a while.
  • Pre-heat the oven to 350 degrees F.
  • Gradually, add the dry ingredients to the wet ingredients with a spatula until the batter turns smooth.
  • Gently fold the chopped pistachios to the batter.
  • Divide this batter to the already greased muffin pan.
  • Sprinkle a few chopped pistachios over the batter and bake for 20-25 minutes until a skewer inserted comes out clean.
