How to Make Mushroom and Cashew Nut Filling

  • Soak cashew nuts for 4-6 hours.
  • Add 1 cup of water and simmer till cooked.
  • Meanwhile, cut mushrooms into quarters.
  • Heat oil and fry onions till light brown.
  • Add all the powders, fry for 30 seconds.
  • Add mushrooms. Sprinkle with little salt.
  • Cover and simmer for 5-7 minutes.
  • Add tamarind pulp, cooked cashew nuts and salt.
  • Simmer without covering till the gravy thickens and coats the mushrooms and cashew nuts.
  • Place filling on chapatti or paratha, sprinkle with some chopped tomato and coriander leaves, roll up and serve.
