How to Make Mutton Do Pyaja

  • First, take ghee in a thick pan and fry the sliced onions in the ghee to a golden brown colour.
  • Remove the fried onions and fry the mutton pieces in the same ghee till they are brown.
  • Remove ghee from fire and after a while take mutton pieces out of it.
  • Now add red pepper, cumin seeds, ginger-garlic paste, coriander powder, cardamom, cloves, cinnamon and black pepper to the ghee.
  • Cook for about 8 mins on a low fire.
  • Add mutton and water, then cook till the mutton turns tender.
  • Add well beaten curd to the cooked mutton and continue cooking for another 20 mins.
  • Add now soaked saffron, cream and browned onions.
  • Cook all the ingredients for about 10 mins, more on a low fire.
  • Garnish it with well-chopped coriander leaves.
  • Serve hot with pulao or chapattis.
