Ingredients

  • 500 gms - Mutton
  • 225 gms - Ghee
  • 1.5 kg - onions, sliced
  • 500 gms - Curd
  • 225 gms - fresh Cream
  • 1 tsp - red mirchi
  • 1.5 tsp - Turmeric powder
  • 1 tsp - Cumin seeds
  • 50 gms - Ginger paste
  • 50 gms - Garlic paste
  • A pinch Saffron dissolved in 2 tbsp - warm Milk
  • 1 tsp - coriander powder
  • 6 small Cardamoms
  • 4 large Cardamoms
  • 4 Cloves
  • 1.5 - Cinnamon stick
  • 1 tsp - black pepper
  • 2 cups - water
  • Salt to taste
  • How to Make Mutton Do Pyaja:

    1. First, take ghee in a thick pan and fry the sliced onions in the ghee to a golden brown colour.
    2. Remove the fried onions and fry the mutton pieces in the same ghee till they are brown.
    3. Remove ghee from fire and after a while take mutton pieces out of it.
    4. Now add red pepper, cumin seeds, ginger-garlic paste, coriander powder, cardamom, cloves, cinnamon and black pepper to the ghee.
    5. Cook for about 8 mins on a low fire.
    6. Add mutton and water, then cook till the mutton turns tender.
    7. Add well beaten curd to the cooked mutton and continue cooking for another 20 mins.
    8. Add now soaked saffron, cream and browned onions.
    9. Cook all the ingredients for about 10 mins, more on a low fire.
    10. Garnish it with well-chopped coriander leaves.
    11. Serve hot with pulao or chapattis.
