  • 250 g - Mutton on the bone
  • 5 cups - stock
  • 1 Onion studded with a Clove
  • 1 Bay Leaf
  • 2 tbsp - finely chopped Mint
  • salt and white pepper to taste

How to Make Mutton Pudina Soup

  • In a large pan, bring the stock, mutton, onion, bay leaf and salt to the boil.
  • Simmer for 1 hour until mutton leaves the bone. Strain.
  • Remove mutton from the bones.
  • Flake mutton and add to the strained soup.
  • Bring soup to boil and simmer for 15 minutes.
  • Add white pepper and pudina before removing from heat.
  • Put lid on pan, allowing pudina to infuse.
  • Serve hot with crusty rolls and butter.
